Sole of Discretion is an initiative that predominantly supports small-scale British fishers who fish ethically, sustainably and responsibly. Their methods have much less impact on the sea bed, using only static nets and hand lines, from smaller boats, and they truly care about the quality of their catch. Sole of Discretion will always agree a payment in advance with their fishers, which means that no matter the market conditions, fishers can always rely on being paid fairly.

Storage & prep

Store below 4C

Rub oil into the skin, season well. Pan fry, skin side down in a good lug of good vegetable oil for 5 - 7 minutes. No need to turn as this may break up the flesh. Alternatively, bake for 10 - 12 minutes until cooked through. Or, rub oil, salt & pepper into the skin, and grill for 5-7 minutes skin-side up under a medium - high heat.

Not suitable for home freezing.The fish will have been previously frozen. Refreezing doesn't pose a health risk, but may impair the texture. Freeze within the Use by date.
