This is a real cheese-lover’s cheese, made in Val Taleggio in Lombardy since Roman times. The cows that graze this region’s alpine pastures produce sweet milk which provides this semi-soft cheese with its beautiful, creamy texture. Having been ‘brine-washed’, it’ll pack a bit of a pong, as well as being prone to some moulding on the rind. This is all completely natural and does not affect the quality of the cheese within. Though some purists call the rind edible, we’d recommend removing it.

It's a valley actually renowned for the soft cows' milk cheese Taleggio, which has been made there for centuries. The people at CasArrigoni have been at it for thirty years now, following the age-old traditions of the mountainous area, and they continue to fine-tune their know-how and expertise to ensure their cheese is never less than the best.
