This is a real cheese-lover’s cheese, made in Val Taleggio in Lombardy since Roman times. The cows that graze this region’s alpine pastures produce sweet milk which provides this semi-soft cheese with its beautiful, creamy texture. Having been ‘brine-washed’, it’ll pack a bit of a pong, as well as being prone to some moulding on the rind. This is all completely natural and does not affect the quality of the cheese within. Though some purists call the rind edible, we’d recommend removing it.
