Pop sustainably wild-caught Red Gurnard into your oven for a melt-in-your-mouth meal. Traditionally used as bait by fishermen, this slightly odd-looking fish has recently seen a surge in popularity. Their unique, bony structure makes them a little trickier to fillet so they're perfect for cooking whole. The skin has been removed so its even easier to pick the tender meat off the bone.Try roasting the gurnard whole, wrapped in parchment with herbs – en papillote. A classic ingredient in traditional bouillabaisse from Marseille, this spiky little fish helps create a delicious and hearty soup base.
