Smoked Salmon & Smashed Avocado Open Rye Sandwich

These salmon, avocado and rye open sandwiches make an easy, elegant canapé or light snack. Toasted slices of rye bread are topped with zingy smashed avocado, tender smoked salmon then finished with pink pickled red onion and a scattering of peppery micro herbs.

Ingredients

  • 1 red onion
  • 1 lemon
  • 3 slices of rye bread
  • 150g smashed avocado
  • 100g smoked salmon
  • A handful of micro herbs

Method

1. Trim, peel and finely slice the red onion. Pop it in a small bowl. Halve the lemon and squeeze the juice over the red onion. Add a pinch of salt and scrunch together wit your hands for 1-2 mins. Set aside to lightly pickle for 5-10 mins.
2. Lightly toast the rye bread then cut each slice of bread into 4 quarters. Dollop the smashed avocado mixture on top of each quarter. Layer over the smoked salmon slices. Scatter over the lighlty pickled red onion. Garnish with a handful of micro salad and serve.
