  • 400g Brussels sprouts

1. Preheat your oven to 190°C/Fan 170°C/Gas 5. Trim the bases off the Brussels sprouts and peel off any ragged outer leaves. Halve any really large Brussels sprouts.
2. Tip all the Brussels into a roasting tin or dish. Drizzle over some olive oil and season with salt and pepper. Toss to coat in the oil and seasoning. Roast for 20-25 mins till lightly browned and cooked through, but still with plenty of bite. Serve straight away.
