Simple Roast Brussels Sprouts

Roasting Brussels sprouts gives them a delicately smoky flavour. And ensures they're tender but still with plenty of bite. This is an easy way to cook them. Great for Sunday roasts and Christmas meals.

Method

1. Preheat your oven to 190°C/Fan 170°C/Gas 5. Trim the bases off the Brussels sprouts and peel off any ragged outer leaves. Halve any really large Brussels sprouts.
2. Tip all the Brussels into a roasting tin or dish. Drizzle over a little olive oil and season with salt and pepper. Toss to coat in the oil and seasoning. Roast for 20-25 mins till lightly browned and cooked through, but still with plenty of bite. Serve straight away.
3. Add Extra Flavour
Toss your sprouts in a spice mix before roasting for an extra layer of flavour. Try a spoonful of mixed herbs, then add a squeeze of lemon juice and a pinch of freshly grated zest just before serving. Add a generous pinch of vegetable curry powder, Jamaican jerk seasoning or fajita seasoning if you'd like to add some chilli heat.
