Sangria Ice Lollies

Spanish sangria is refreshing on a hot summer's day, especially when it's turned into cooling ice lollies – an icy treat that's just for grown-ups.

  • 400ml red wine
  • 200ml orange juice
  • 2 heaped tbsp Demerara sugar
  • 2 oranges
  • A handful of raspberries

Method

1. Pour the red wine and orange juice into a pan. Add the sugar. Simmer for 10 mins, stirring now and then, till the sugar has dissolved. Take off the heat and leave to cool.
2. While the sangria mixture cools, slice the skin and pith off 2 oranges. Slice the segments out of the papery skins, then halve each segment.
3. Pop a few orange chunks and raspberries into each popsicle or ice lolly mould. Pour in the cooled sangria mixture.
4. Freeze the ice lollies for at least 24 hrs. Serve straight from the freezer.
