Popeye's Dip

Popeye's Dip

Full of healthy green spinach, this easy to whip up dip is also gorgeous folded through pasta, stirred through risotto, dolloped into a cold roast chicken sandwich or tucked into a chicken breast before wrapping in bacon and roasting.

Ingredients

  • 2 handfuls of fresh spinach leaves, washed and stems trimmed, if needed
  • ½ garlic clove, peeled and finely minced
  • 200g goat's or sheep's cheese
  • 1 lemon, zest and juice
  • A little bit of Parmesan, finely grated
  • Freshly ground black pepper

Method

1. Splash a bit of olive oil in a frying pan. Saute the garlic just until soft. Add the spinach and a good pinch of salt. Stir it around the warm pan just until it wilts down. Tip into a colander. Gently press and squeeze out some of the water. Finely chop. Fold into the goat's cheese. Add lemon juice and zest, Parmesan, a good bit of pepper and a glug of olive oil. Fold together. Tuck in. Will keep in the fridge for 2-3 days.
