Hot Buttered Cider

This sweet, spiced hot cider is just the ticket for keeping warm on frosty winter nights. made with cider spiked with spiced rum and whisked with butter, honey, cinnamon and mixed spice till it's rich, creamy and aromatic. Serve round a bonfire on a cold, starry night for maximum enjoyment.

  • 110g salted butter, softened
  • 110g honey
  • 1 tsp mixed spice
  • 1/2 tsp cinnamon
  • 1.3 ltrs medium dry cider
  • 150ml spiced rum

Method

1. Make the spiced butter first. Put the softened butter in a mixing bowl and add the honey, mixed spice and cinnamon. Beat till combined and smooth. Scoop the butter into a tub, seal and store in the fridge for up to 2 weeks.
2. When you want to make the cider, pour the cider into a large pan and add 150ml spiced rum. Pop on a lid, then pop the pan on a medium-low heat and gently warm for 4-5 mins till it is steaming hot. Turn the heat down to very low. Scoop in the spiced butter and warm, whisking the cider, till the butter has melted. The cider will foam up a little, so make sure the heat is low. Taste and add a little more honey or cinnamon if you think the cider needs it. Ladle the cider into heatproof glasses or mugs and serve.
3. Spice Up Your Butter The spiced butter is delicious spread on toast or used to top pancakes and waffles. When you;re mixng the butter, make double the quantity and keep half in the fridge for spreading on your breakfast buns.
