Frozen Yogurt Bark

A fresh take on fro-yo, this creamy and crunchy combination of natural yogurt makes a great snack on hot sunny days, and it's easy-peasy to make. Simply spread the yogurt out on a tray, top with a mixture of fruit and nuts and freeze till solid. Then snap and serve.

Ingredients

  • 500g natural yogurt
  • A handful of blueberries, roughly chopped
  • A handful of mixed nuts, roughly chopped
  • A handful of dried cranberries, roughly chopped

Method

1. Line a baking tray with baking paper. Spoon the yogurt into the tray yand spread it out with the back of a spoon so its roughly ½cm thick.
2. Sprinkle the toppings on, gently pressing them in a little. Freeze till solid (2-3 hrs or overnight). Take out and break into handy bite-size pieces. Store in a freezerproof container for up to 3 months.

I used naturl yoghurt and the bars came out really sour. I would try maybe adding some honey next time. We also didn't like the inevitable crystallisation of the yoghurt. Chocolate chips were great though
