Blueberry Compote

A quick and easy compote that takes only three ingredients and five minutes to make. If you've got blueberries, lemon and sugar, you've got everything you need to make this sweet, fruity treat. Dollop it onto yogurt, spread it over scones, use it to fill a victoria sponge... there isn't much this compote can't do!

Ingredients

  • 175g blueberries
  • 20g sugar
  • ½ lemon

Method

1. Tip the blueberries into a small pan and add 20g sugar. Squeeze in the juice from half a lemon. Set on a medium pan and gently warm, stirring, for 2-3 mins till the blueberries have broken down and formed a compote. Spoon into a serving bowl.
