Thanks goodness for Harold, who has stepped into the breach as the English Gooseberry season has come to an end. His wonderful mix of red and green gooseberries are grown on a cooperative on the fertile fields of Holland.
Firm cooking gooseberries will keep (unwashed) in the fridge for a week or two. They also freeze well. Softer dessert gooseberries are less durable: keep refrigerated and eat within two or three days. If there is a husk on the fruit peel away and wash, dry and cut off the tails. Gooseberries can be quite sharp, so don’t forget the sugar!
