Cotswold brie is an excellent cheese with the creamy, strong flavour one would expect. Yellow in colour with a brilliant gloss and a delicious white rind. Perfect when paired up with Pimhill oatcakes, though we have it with a glass of red.

Simon Weaver's Cotswold Organic Dairy is relatively new to cheesemaking, but his cheeses are already getting lots of attention - in the space of just one year, he has scooped two Taste of the West awards and a Gold medal at the 2006 World Cheese Awards! All his cheese is made from milk from his herd of Fresians, who graze the Cotswold meadows of the River Dikler.

Storage & prep

The cheese should be refrigerated until it is to be used. The brie should always be tightly wrapped. As soon as mould appears on the cheese it should be disposed of. The cheese should be returned to room temperture for between thirty minutes to an hour before being consumed.
