Strawberry & Crème Fraîche Croissant

The quintessential summer team of strawberries and cream, folded into fabulously flaky butter croissants for a taste of British summertime crossed with a dreamy French getaway. Tangy crème fraîche, sweet strawberry compote and fresh strawberries snuggle up in our favourite classic pastry, finished with a soft dusting of sugar.

  • 2 croissants
  • 4-8 strawberries, depending on size
  • 4 tbsp crème fraîche
  • 3 tbsp strawberry compote
  • Icing sugar, to dust

Method

1. Preheat your oven to 180°C/Fan 160°C/Gas 4. Place the croissants on a baking tray. Slide them into the oven for 5 mins to warm through.
2. While the croissants warm, thinly slice the strawberries. Spoon the crème fraîche and strawberry compote into a smal bowl and stir a couple of times to ripple them together.
3. Cut the croissants in half and spoon in the strawberry-rippled crème fraîche. Tuck in the sliced strawberries and sandwich the halves together. Dust over a little icing sugar and serve while still warm.
