Strawberry & Crème Fraîche Croissants

Strawberries and cream for breakfast? Why not. Fill warm croissants with tangy crème fraîche rippled with strawberry compote and fresh strawberries. Dust with icing sugar. And serve with coffee. The perfect weekend brunch.

  • 4-8 strawberries, depending on size
  • 4 tbsp crème fraîche
  • 3 tbsp strawberry compote
  • Icing sugar, to dust

1. Preheat your oven to 180°C/Fan 160°C/Gas 4. Place the croissants on a baking tray. Slide them into the oven for 5 mins to warm through.
2. While the croissants warm, thinly slice the strawberries. Spoon the crème fraîche and strawberry compote into a small bowl and stir a couple of times to ripple them together.
3. Cut the croissants in half and spoon in the strawberry-rippled crème fraîche. Tuck in the sliced strawberries and sandwich the halves together. Dust over a little icing sugar and serve while still warm.
