Raspberry Bliss Balls

A perfect, fruit-filled snack and a great breakfast on the go, these Raspberry Bliss Balls are a light and tatsy way to keep hunger pangs away. Made with fresh raspberries blended with desiccated coconut, oats, dates and peanut butter, they're soft, chewy and delicious. Keep them on hand for a pre-gym energy boost or take them with you on walks and runs.

Ingredients

  • 125g raspberries
  • 6 Medjool dates
  • 100g porridge oats
  • 100g desiccated coconut
  • 2 tbsp smooth peanut butter

Method

1. Pop the raspberries in the freezer for 30 mins till frozen. Meanwhile, pit the dates and pop them in a blender. Tip in the oats and 70g desiccated coconut (keep the rest for later). Scoop in the peanut butter.
2. Tumble in the frozen raspberries. Add 1 tbsp warm water. Blitz till smoothly combined and bright pink.
3. Divide the mixture into 12 equal-sized pieces. Roll them into balls. Tip the remaining desiccated coconut into a shallow bowl. Roll each ball in the coconut to lightly coat. Place the balls on a large plate and pop them in the fridge for at least 20 mins to firm up before eating.
4. Eat Me, Keep Me
The Raspberry Bliss Balls will keep for up to 5 days in an airtight container in the fridge.
