Power Porridge with Banana, Apricots & Cashew Butter

Kick-start your day with a bowl of creamy porridge. An energising mix of oats and milk sweetened with banana, dried apricots and honey. A spoonful of cashew butter adds richness.


  • 1 banana
  • 25g dried whole apricots
  • 40g porridge oats
  • 250ml milk of your choice (plant or dairy)
  • 1 tsp cashew nut butter
  • 1 tsp honey or agave syrup

1. Peel and roughly chop the banana. Roughly chop the dried apricots.
2. Tip the porridge oats into a small pan. Add ¾ of the banana and pour in the milk. Put the pan on a medium heat and gently warm, stirring, for 3-5 mins till thick and creamy.
3. Spoon the porridge into a bowl. Top with the remaining banana and the chopped apricots, and finish with a spoonful of cashew nut butter and a drizzle of honey or agace syrup. Eat straight away.
