Slow Cooker Mulled Wine

Use your slow cooker to make the perfect festive drink. The gentle heat helps the flavours combine without boiling the wine. Ginger, cardamom and cloves add spice. Orange for sweetness. A splash of brandy or rum peps things up.

Ingredients

  • 2 x 750ml bottles of red wine, such as merlot, shiraz or zinfandel
  • 2 oranges, plus extra to serve
  • 25 whole cloves
  • 50g fresh ginger
  • 4 cinnamon sticks
  • 8 cardamom pods
  • 250g Demerara sugar
  • Honey or maple syrup, to taste (optional)
  • 100ml brandy or golden rum, to taste (optional)

Method

1. Pour the wine into your slow cooker. Use a vegetable peeler to peel the zest off the oranges. Stud the zest with the cloves. Drop the peel into the slow cooker. Halve the peeled oranges and squeeze in the juice.
2. Slice the ginger into thin slices and add to the slow cooker with the cinnamon sticks and cardamom pods. Tip in the Demerara sugar and gently stir to mix.
3. Pop the lid on the slow cooker. Set it to low. Gently cook for 4 hrs. Stir the mulled wine and taste. If it needs a little extra sweetness, drizzle in some honey or maple syrup. If you'd like to add some extra heat, add the brandy or rum.
4. Ladle the mulled wine into heatproof glasses. Slice a couple of oranges and tuck the slices into the glass. Serve straight away.
