Kiwi, Spinach & Banana Fibre Smoothie

A quick way to add fibre to your daily diet is by making yourself a fibre-rich smoothie. Eating kiwi fruit with the skin on can increase the amount of fibre you get by 50%, but not everyone loves the texture. So, blending it into a smoothie is a tasty way to get the fibre without the texture. Adding baobab powder also helps easily bump up the fibre.

Ingredients

  • 1 kiwi
  • 1 banana
  • 25g baby leaf spinach
  • 2 tsp baobab powder (optional)
  • 250ml almond drink

Method

1. Roughly chop the kiwi and pop it into a blender. No need to peel – the peel is a great source of fibre. Peel and break in the banana. Tuck in the baby leaf spinach. If you're using baobab powder, sprinkle that in.
2. Pour in the almond drink and add 2-3 ice cubes. Blend for 1-2 mins till smoothly combined. Pour into a large glass and serve.
