Green Monkey Smoothie

A stunning blend of cashews, bananas, spinach and ginger. This will give you so much energy you'll feel like swinging from the trees.

  • 100g baby leaf spinach
  • 3 bananas
  • 50g cashews
  • A thumb of ginger

1. Pop your cashews into a lidded jar. Cover with water. Soak overnight. If you don't have time to do this, you can skip the step but the smoothie won't be as, well, smooth...
2. Drain your soaked cashews. Pop into a blender or food processor. Blitz to a rough paste. Keep the motor of going and trickle in 250ml water. Add your bananas and spinach. Peel and chop the ginger and add it too. Blend till smooth, trickling in more water if needed.

In the recipe above, you didn't explain what the person needs to do with the ginger. I'm assuming that it needs to be grated and added into the blender along the spinach and bananas?
