  • 25g caster sugar
  • 2 cardamom pods, lightly crushed
  • 75ml cognac
  • 150ml double cream
  • 1 tsp vanilla extract

Method

1. Pop the sugar in a small pan and add 2 tbsp cold water (around 30ml) and the cardamom pods. Gently heat till the sugar has dissolved and the syrup comes to the boil. Boil for 2 mins. Take off the heat and cool. Lift out the cardamom pods.
2. Add a handful of ice to a cocktail shaker or large jar. Pour in the sugar syrup, cognac, cream and vanilla extract. Shake together for 1-2 mins. Strain into glasses and serve straight away.
