Fatty's Organic Gin is a classic gin full of botanical flavours with a hint of dill, which makes it the perfect choice for this herbaceous cocktail that dives into the herb garden and adds a thyme-scented syrup to the gin, along with a sharp dash of lime. Top up with tonic water and enjoy a crisp, cooling cocktail.


  • 100g caster sugar
  • A handful of thyme sprigs
  • 25ml Fatty’s Organic Gin
  • 25ml fresh lime juice
  • Tonic water, to top up
  • Dill sprig, to garnish

1. Start by making some thyme-scented sugar syrup. Tip 100g caster sugar into a small pan and pour in 100ml water. Drop in a couple of thyme sprigs. Place on a medium heat, bring to the boil, then boil for 2 mins. Take the pan off the heat and let it cool. The syrup will keep for a few weeks in a sealed jar in the fridge. Remove the thyme sprig before pouring it into the jar.
2. Half fill a cocktail shaker (or large jar) with ice and pour in the gin and lime juice. Add 25ml of the thyme syrup. Seal the shaker and shake vigorously for around 30 secs
3. Fill a tumbler with ice, strain the cocktail over the ice. Top up with tonic water and garnish with a sprig of dill to serve.
