Beetroot, Apple & Ginger Swirl

Blend earthy beetroot, sweet apple and zingy ginger together with a splash of ultimate almond drink to create this luxuriously deep pink smoothie. A fiery way to start your day.

  • 100g beetroot
  • A thumb of ginger
  • 200g apples
  • 500ml ultimate almond drink

Method

1. Trim, peel and coarsely grate the beetroot (see our beetroot tip for stain-free prep). Scoop the prepped beetroot into your blender.
2. Finely grate the ginger (no need to peel unless you prefer to).. Quarter the apple and slice out the core. Add to the ginger and apple to the blender.
3. Pour in 500ml of the almond drink. Add a handful of ice and blitz till smooth. Pour into 2 glasses and serve.
4. Stain-free prep^ Beetroot can stain everything red. Use a glass chopping board, or one you can wash up straight away. Protect your hands by wearing gloves and your clothes with an apron.
