It’s time for the dance of the sugar plum fairy with our crispy, crunchy sugar crusted plums. They make an excellent light pudding after a hearty roast dinner.

  • 1 egg white
  • ½ cup of caster sugar
  • 1 tsp ground cinnamon
  • 8 cloves, ground
  • 6 plums
  • A tub of mascarpone
  • A drizzle of wildflower honey

The egg white leaves a brilliant meringue-like crust in the baking dish. You can scrape it off and scatter it over the mascarpone cream. It’s the new licking the bowl.

1. Pop your oven to 200°C/180°C Fan/Gas 6.
2. Whisk the egg white in a bowl. Stir in your sugar and half of the cinnamon and ground cloves.
3. Dip the plums in the mix, turning to coat thoroughly.
4. Place the plums into a buttered baking dish. Roast in the oven for 10-15 mins or till crisp and golden brown.
5. Whilst the plums cook, put your mascarpone in a bowl and with a good drizzle of honey.
6. Serve the plums with the honey mascarpone and the leftover spices for sprinkling.
