- ½ cucumber, coarsely grated
- A good pinch sea salt
- ½ mug Greek or natural yogurt
- A few fresh mint leaves
1. Place the grated cucumber in a fine mesh sieve or something you can use to press the water out of the cucumbers (you could use your hands!). Add a good pinch of salt to the cucumbers and then give them a good squeeze – this will keep your raita from going all watery.
2. Mix the squeezed cucumber with the yogurt. Add a bit of finely chopped mint, if you like. Easy peasy and super with our Bombayed Jersey Royals or a curry.
