Pineapple, Spinach & Coconut Kefir Smoothie

Start your day with this tropical twist on a green smoothie, blending sweet pineapple with baby leaf spinach, a pinch of maca root powder and creamy coconut milk kefir.


  • ½ ripe pineapple (approximately 250g prepared weight)
  • 1 tsp maca root powder
  • ½ lemon
  • 100g baby leaf spinach
  • 200ml natural, dairy-free coconut milk kefir
  • ½-1 tbsp maple syrup (optional)

1. Slice the leaves and skin from half a ripe pineapple and chop it into small chunks, scooping out any woody eyes from the flesh with the tip of your knife. Place the chopped pineapple in a blender.
2. Add the maca root powder and baby leaf spinach. Squeeze in the juice from half the lemon. Pour in 250ml coconut milk kefir and add a handful of ice cubes.
3. Blend till smooth. Taste and add a little maple syrup if you think it needs it. Serve straight away.
