Melon, Spinach & Ginger Blaster

The most summery way to serve spinach is to combine it with sweet and refreshing galia melon. Add a chunky of fiery fresh ginger and a splash of creamy cashew drink. The result is a thirst-quenching green smoothie with a spicy kick.

  • ½ galia melon
  • A thumb of ginger
  • 50g baby leaf spinach
  • 500ml cashew drink

Method

1. Halve the melon. Scoop the seeds out of one half of the melon. Scoop the flesh out of the skin, then add it to the blender. See our tip below for how to store and use up the remaining melon half.
2. Finely grate the ginger into the blender (no need to peel unless you prefer to). Tuck in the baby leaf spinach. Pour in 500ml of the cashew drink and add a cupful of ice. Blend till smooth. Pour into 2 large glasses and serve.
3. Reduce food waste^ Leftover melon will keep in the fridge for 3-4 days. It’s delicious added to summer salads with rocket, sun-dried tomatoes and a balsamic dressing.
