Apple Refresher

This deliciously refreshing green smoothie is brimming with flavour. Flat leaf parsley has a rich, grassy note that's balanced by sweet apples, earthy celery and zingy fresh lemon.

Ingredients

  • 250g apples
  • 250g mini cucumbers
  • 2 celery sticks
  • A handful of flat leaf parsley
  • 1 lemon
  • 500ml almond drink with rice

Method

1. Slice the apples into quarters and chop out the cores. Roughly chop the apples and pop them in your blender. Roughly chop the the cucumbers, celery sticks and the flat leaf parsley. Add them to the blender.
2. Slice the lemon in half. Squeeze the juice from 1 half into the blender, catching any pips before they drop in. Add the chopped hazelnuts. Pour in 500ml almond drink and add a cupful of ice. Blend for 1-2 mins till smooth. Taste and add a splash more lemon juice, if you think it needs it.
3. Pour into 2 large glasses and serve.
