Organic goose is a fantastic alternative to turkey. It's rich, tender and wonderfully moist, thanks to the natural layer of fat that it has. Organic goose isn't easy to come by – which makes these birds all the more special. We work with Ben and his flock of Summerhill Farm geese in Devon, where they waddle, honk and gander together out and about all day long. They’re reared to full maturity from little hatchlings under Ben’s caring watch, and it’s the only place where this happens in Britain. All in all, it’ll make for a truly memorable, totally unique Christmas dinner.

This medium organic goose will feed about 7-8 people.

Ben & Alice Moseley moved to Summerhill Farm, owned by the Soil Association Land Trust in October 2007. It is a small mixed farm in mid Devon, on the Two Moors Way which links Dartmoor and Exmoor. Among other things they have laying hens, a herd of red ruby cattle and these wonderful organic geese. They like to support their local community by offering school visits as well as volunteer days to help with the environmental management of the farm.

Storage & prep

Keep refrigerated. To prepare for cooking: Remove giblets. Prick the skin under the wing, sides of the breast and by the parsons nose. For oven cooking, suggested guide is 15 mins per 500g plus an extra 30 minutes. We recommend that you wrap the goose in foil before cooking and to achieve a crispy skin, remove the foil 20 min before the end. Juices should run clear once cooked. Allow to rest for 15-20min before carving.
