Cajun Sweet Potato & Pumpkin Seed Salad

Intro
Chunks of sweet potato are tossed with a fiery Cajun spice mix and roasted till tender. They are then combined into a salad with cherry tomatoes, coriander, pickled red onions and lamb's lettuce.

Nutty chunks of potato are simmered till tender and then tossed into a salad with purple sprouting broccoli, fresh mint, toasted almonds and a punchy lemon and mustard dressing.
New season nectarines are cut into chunks and given a lick of heat, before being tossed in sticky balsamic vinegar. Served with roasted red onions, nutty bulgar wheat, fresh peashoots and soft sheep's cheese.
