This mould-ripened organic cheese tastes fresh and rich at its centre, and becomes more mushroom-y, savoury and earthy the closer to the rind you get. It’s matured for six to twelve weeks, which gives it a wonderfully deep flavour, with slight citrus notes at play too. Throw in the creamy, moist texture this cheese has, and it’s something not easily forgotten.
