All the milk used to make the cheese comes from the Holden family’s herd of 65 Ayrshire cows. This breed is perfect for Bwlchwernen Fawr (that’s the name of the farm in Welsh) because they’re hardy so they can withstand the pretty wet weather they get in Ceredigion and their milk is rich in fats and proteins making it perfect for cheesemaking. The farm is also the oldest certified organic dairy farm in Wales having been organic since 1973.
