- 400g plums
- 2 apples
- ½ tsp ground ginger
- ½ tsp ground cinnamon
- 1 tbsp cornflour
- 180g caster sugar
- 180 unsalted butter
- 100g honey
- 340g porridge oats
- 160g plain flour
- 2 tsp vanilla extract

Method
1. Preheat oven your 180°C/Fan 160°C/Gas 4. Line a 23cm square baking tin with baking paper.
2. Halve the plums and remove the stone. Roughly chop them. Quarter the apples, remove the cores and roughly chop the apples. Scoop the fruit into a large pan and set it on a medium heat. Tip in half the sugar, the ground ginger, ground cinnamon and the cornflour. Cover with a lid. Simmer for 30 mins till soft and jammy, stirring occasionally.
3. Meanwhile, add the butter, honey and 1 tsp vanilla extract to a separate pan. Warm on a low heat for 2 mins till melted.
4. Tip the oats, plain flour and remaining sugar into the melted butter. Stir well to mix. Pour two-thirds of the oat mixture into the bottom of the lined cake tin. Squish this down with the back of a spoon till evenly spread and compact.
5. Roughly mash the plum and apple mixture in the pan. Spread this over the oats. Sprinkle over the remaining oat mixture – you should be able to see some of the plum and apple mixture through the oat crumble on top.
6. Pop the oven. Bake for 25-30 mins till the top is golden and the plum and apple mixture is bubbling through. Remove from the oven and let it stand for 10 mins to slightly firm up before slicing into bars.
7. Eat Me, Keep Me
The Oat Bars will keep in an airtight tub for up to 5 days. Store them at room temperature in a kitchen cupboard.
