Cashel Blue Cheese, Pear & Rocket Salad

Intro

Pears and blue cheese are a classic combination. This autumnal salad takes those flavours up a notch by using award-winning Cashel Blue, an Irish cheese with a creamy texture and rich, tangy flavour. Caramelising the pears brings out their natural sweetness. Served together, along with nutty cannellini beans and peppery rocket, it's a delicious mix.

Purple sweet potatoes are avaialble for a few months every year. They get their rich colour from a high concentration of polyphenols and antioxidants. They taste nutty and sweet, with a creamy texture. Chop them in wedges and roast till caramelised, then top with a chopped cherry tomato and lime salad and tangy feta.
