Sunshine Apple Shake

Sip on sweet sunshine in smoothie form with a golden glassful of this subtly spicy concoction made with our favourite fruit and veg - apples and carrots - blended with fresh turmeric, nutty coconut flakes and creamy oat drink.

Ingredients you'll need
- 2 apples
- 2 carrots
- 15g coconut flakes
- A thumb of turmeric
- 330ml oat milk

Step by step this way

Quarter the apples and slice out the cores. Roughly chop the apples then add them to your blender. Trim the carrots and roughly chop them. Slice the turmeric (no need to peel – see our tip about turmeric prep) and add to the blender with the coconut flakes.

Pour in 330ml oat drink (save the rest for this week’s other smoothies). Drop in a few ice cubes then whizz till smooth. Pour into a couple of glasses and serve.

The Golden Rule
Turmeric has a habit of turning things bright yellow, so slice it on a glass board or one you can wash up straight away. You can also wear gloves to protect your fingers and an apron to keep your clothes stain free.
