Strawberry, Coconut & Cucumber Thickie

A creamy and refreshing smoothie, combining the seasonal flavours of summer-sweet strawberries and juicy cucumbers with a zing of lemon and a cool dollop of dairy-free coconut yogurt.

Ingredients you'll need
- 225g strawberries
- ½ cucumber
- 1 lemon
- 125g dairy-free coconut yogurt

Step by step this way

Pull the stems and leaves from the strawberries and pop the berries in your blender. Chop half the cucumber and add the chopped cucumber to the blender.

Zest and juice in the lemon. Add the coconut yogurt. Add a few ice cubes and whizz till smooth. If it’s too thick, add a little water and blitz again.

If you have a large blender you can use all the cucumber in this smoothie (it will affect the nutritional information), or keep the cucumber in your fridge for a couple of days. For a simple salad, slice the leftover cucumber and finely slice the red onion. Toss with a dressing made from yogurt stirred with a spoonful of mustard, white wine vinegar, chopped dill, salt and pepper.
