- ½ pineapple
- 2 apples
- 25g raisins
- 50g baby leaf spinach
- 330ml oat drink
- A few ice cubes
- 1.
Slice the leaves off the pineapple and halve it. Wrap one half and store in the fridge (see our tip below). Slice the skin off the remaining half, scooping out any tough ‘eyes’ left behind with the tip of a small, sharp knife. Roughly chop the flesh. Pop the chopped pineapple in your blender
- 2.
Quarter the apples and slice out the cores and seeds. Add them to your blender. Tip in the raisins and tuck in the baby leaf spinach. Add a few ice cubes and pour in the oat drink.
- 3.
Whizz together for a few mins till the ingredients are combined. Pour into two glasses and serve.
- Tip
Pull up a pineapple
If you have a big blender you can use all the pineapple in your smoothie (although this will affect the nutritional content). Leftover pineapple will keep, wrapped, in your fridge for a couple of days. Use it to make a salad: mix chopped pineapple, tomatoes, cucumber and red onion together. Mix up a hot and sour dressing with lime juice, caster sugar, rapeseed oil, Worcester sauce, crushed garlic and chopped chilli. Toss the salad and dressing together and serve straight away.
