Pineapple, Pumpkin Seed & Coconut Smoothie

Put the pineapple in the coconut and drink ‘em both up with this sunny-sweet mix of juicy golden pineapple chunks and creamy spoonfuls of dairy-free coconut yogurt, plus a scattering of omega-rich pumpkin seeds for nutty bite.

Ingredients you'll need
- 1 pineapple
- 25g pumpkin seeds
- 125g dairy-free coconut yogurt

Step by step this way

Slice the leaves off the pineapple and slice off the skin. Use the tip of the knife to scoop out any tough ‘eyes’ left behind in the pineapple flesh. Roughly chop the flesh, discarding any woody bits of core. Add the pineapple to your blender.

Tip the pumpkin seeds into the blender and spoon in the coconut yogurt.

Add a few ice cubes and pour in 150ml cold water. Blitz for a few mins till smooth, then pour into glasses and serve.
