Pineapple, Cashew & Ginger Shake

A creamy shake bursting with fruity sunshine. This smoothie blends juicy pineapple with a spicy slice of fresh ginger, buttery cashews and a zingy burst of orange, all whizzed with a splash of brown rice drink.

Ingredients you'll need
  • ½ pineapple
  • 1cm slice of ginger
  • 1 orange
  • 35g cashews
  • 330ml brown rice drink

Step by step this way
  • 1.

    Halve the pineapple then carefully slice the skin off 1 half. Halve the pineapple again and slice out the core. Chop the pineapple into small chunks (see our tip on what to do with your leftover pineapple half).

    Chop a 1cm slice off the ginger and add to the blender. Halve the orange and squeeze in the juice from both halves. Tip in the cashews.

    Pour in 330ml of the brown rice drink and drop in a few ice cubes. Blend till smooth and pour into glasses to serve.

  • Tip

    Pineapple Express
    If you have a big enough blender, you can add all the pineapple to the smoothie. This will affect the nutritional info and you may need to add some water. Alternatively peel and chop the remaining half and toss with plenty of lime juice and zest. Serve with some dairy free coconut yogurt for a tropical pud.
