Nuts About Apricots

Velvet-skinned apricots are our favourite early summer fruit, full of juice and sweet honey flavours. We’ve teamed them up with cashews and bananas to make a creamy smoothie swirled with tiger nut drink and a dash of maple syrup.

Ingredients you'll need
  • 250g apricots
  • 1 banana
  • 35g cashews
  • 1 tbsp maple syrup
  • 330ml tiger nut drink

Step by step this way

    Slice the apricots in half and scoop out the stones. Add the apricots to your blender. Peel the banana and break it into the blender. Scatter in the cashews (see our tip about soaking them ahead of time) and pour in 1 tbsp maple syrup.

    Pour in 330ml tiger nut drink and add a handful of ice cubes. Blend till smooth. Have a taste and add a little more maple syrup if you prefer your smoothie sweeter. Pour into glasses and serve.

  • Tip

    A nice long soak
    If you have time, soak the cashews overnight in a bowl of cold water, then drain them and add them to your smoothie following the recipe. Soaks them makes them easier to blend and may make them easier to digest.
