- 2 clementines
- 2 beetroot
- 50g baby leaf spinach
- 2 Medjool dates
- 125g dairy free coconut yogurt
- A few ice cubes
- 200ml cold water

Peel the clementines and remove as much white pith as possible. Halve them and flick out any pips. Pop the clementines to your blender. Peel the beetroot (see our tip below), cut it into small pieces and add them to the blender.

Tuck in the baby leaf spinach. Use your thumb to squash the Medjool dates and pull out the stones. Add the dates to the blender.

Spoon the dairy free coconut yogurt into the blender and add a handful of ice cubes. Pour in 200ml cold water and blend smooth. Pour the smoothie into 2 glasses and serve.

Red alert
Beetroot can be generous with its striking colour, so prepare it on a glass board or one you can wash up straight away. You can also wear gloves and an apron to keep your hands and clothes stain free. - Tip

If you’re new to smoothies, please be aware that raw beetroot can be potent when blitzed into drinks. Try tasting a little at first and drink it slowly.
