Trim and coarsely grate the courgette. Quarter the apples, slice out their cores and chop them into small chunks. Finely grate the zest from the lime. Carve away (and discard) the white pith then roughly chop the lime flesh.
Place everything in a blender with the mint leaves. Pour in 330ml dairy free whole mylk (save the rest of your carton for the other smoothies this week) and drop in a few ice cubes. Whizz till smooth.
