Trim and scrub the carrots (no need to peel them unless you want to). Roughly chop the carrots, and add them to your blender. Quarter the apples and slice out the cores. Roughly chop the apples and add them to the blender.
Drop in the dried apricots and add a pinch of cinnamon. Pour in 330ml dairy free mylk (save the rest for this week’s other smoothies) and add a few ice cubes. Whizz till smooth. Serve, topped with an extra pinch of cinnamon if you like.
