- ½ melon
- 1 mini cucumber
- 1 lime
- A handful of mint, leaves only
- A few ice cubes

Halve the melon. Set 1 half aside for another time (see our tip below). Scoop the seeds out of the remaining melon half, then slice the skin away. Roughly chop the melon flesh and pop it in your blender.

Roughly chop the mini cucumber and add it to the melon. Finely grate in the lime zest. Squeeze in the lime juice. Pick the mint leaves off their sprigs and add them to the blender.

Pour in 300ml cold water and add a few ice cubes. Blitz till smooth and combined, then pour into a couple of glasses to serve.
- Tip
Extra, extra
If you have a big blender you can use all the melon in this smoothie, although this will affect the nutritional information and you may need to trickle in a bit more water. The leftover melon half will keep in your fridge, wrapped, for a couple of days. Try tossing chopped leftover melon with chopped cucumber and tomatoes, some shredded mint leaves and gloss with a simple vinegar and olive oil dressing for a refreshing salad.
