Ingredients you'll need
- 1 melon
- 1 cucumber
- A handful of mint, leaves only
- 200ml coconut milk
Step by step this way

Halve the melon. Scoop out the seeds. Cut into wedges then cut away the skin. Chop into chunks.

Chop the cucumber. Add to the blender with the mint and coconut milk.
- 3.
Pour in 200ml ice cold water or a cupful of ice. Blitz till smooth, trickling in more water till you reach your desired consistency.
