Melon & Cucumber Salad

Cool cucumber and melon are bound by spritely sprouts and a tangy tamarind dressing and toasty cashews. The most super salad for summer.

Ingredients you'll need
  • 1 melon
  • 1 cucumber
  • A 100g tub of alfalfa sprouts
  • A handful of cashews
  • A generous drizzle of tamarind paste
Step by step this way
  • 1.

    Quarter your melon. Scoop out the seeds (discard or save to plant). Cut the skin off the melon. Thinly slice.

    Halve your cucumber lengthwise. Thinly slice. Toss the melon and cucumber with the sprouts. Arrange on plates.

  • 3.

    Set a frying pan over medium heat. Add your cashews. Toast till just golden.

  • 4.

    Drizzle the tamarind over your salad. Finish with the toasted cashews. So simple. So good.
