- ½ melon
- 1 short cucumber
- 1 lettuce
- A handful of mint, leaves only
- 300ml maple water
- A few ice cubes

Halve the melon. Scoop out the seeds, then scoop out the flesh and pop it into a blender. Halve the cucumber Roughly chop 1 half and add that to the blender (see our tip below on what to do with your extra melon and cucumber).

Roughly chop the lettuce and add that to the blender. Pick the mint leaves off their stems and add them with 300ml maple water. Blitz for a few mins till combined and smooth. Serve straight away, poured over ice.

You've got the salad
If you've got a big blender, you can use all the melon and cucumber to make a jug of smoothie for 4. Alternatively, why not turn it into a refreshing summer salad? Cube the melon and toss in a bowl with the sliced cucumber, sliced red onion, a handful of black olives, a drizzle of olive oil and a squeeze of lemon juice. Season, and crumble over a little feta or toasted almonds to finish.
