
- 200g beetroot
- A thumb of turmeric
- 1 lime
- 35g walnuts
- 125g blueberries
- 300ml maple water
- A few ice cubes

Scrub and trim the beetroot. Chop and pop into your blender. Peel and grate the turmeric into the blender – it has quite a strong flavour, so just use half if you’re not sure how much you like it. Grate in the zest from the lime and squeeze in the juice.

Tip in the walnuts and blueberries. Pour in 300ml maple water. Add a few ice cubes and blend for a few mins till smooth and combined. Taste and grate in a little more turmeric, if you’d like more, and blend again. Pour into glasses and serve.

Mellow yellow
Turmeric has a warming, mustardy flavour that works beautifully with the earthy sweetness of beetroot and walnuts. It can be quite potent, so just use a little start with, then add more as you blend. Turmeric also loves to turn things yellow, so grate it onto a plate that you can dunk straight in the washing-up bowl, or grate it directly into your blender. Wearing gloves will help stop your fingers turning yellow.
