Maple & Beetroot Shake

A zesty squeeze of lime brings brightness to this earthy smoothie of scarlet beetroot blitzed with spicy turmeric, sweet walnuts and a good glug of refreshing maple water.

Ingredients you'll need
- 200g beetroot
- A thumb of turmeric
- 1 lime
- 35g walnuts
- 300ml maple water
From your kitchen
- A handful of ice cubes
Step by step this way

Scrub the beetroot and coarsely grate them. Chop the turmeric (see our tip on using fresh turmeric in smoothies). Finely grate the zest from lime. Slice off the skin and white pith and discard them, keeping the juicy flesh.

Place the whole lime, zest, turmeric, beetroot and walnuts in your blender. Slosh in 300ml of the maple water. Add a handful of ice cubes and whizz till smooth.

If you’re new to raw smoothies, please be aware that raw beetroot can be potent when juiced. Try tasting a little at first and drink it slowly. And remember: both turmeric and beetroot love to dye everything purple and yellow. So try to keep them away from wooden boards and kitchen tools and wear gloves to protect your hands.
