- A tin of green lentils
- 1 ripe avocado
- A handful of coriander
- 1 lime
- A bunch of radishes
- 1 garlic clove
- Sea salt and freshly ground pepper
- 2 tbsp olive oil
Wash your radishes. Pluck out a small handful of nice leaves. Add them to food processor or blender with all the coriander, the zest and juice of your lime, a pinch of salt, 2 tbsp olive oil and a peeled slice of garlic. Whiz till smooth. Trickle in a little water, if needed, to bring it all together. Taste. Season as needed.
Drain and rinse your lentils. Toss with the dressing. Thinly slice the radishes. Halve, stone, slice and peel your avocado. Gently fold through the mix. Add a few whole radish leaves if you like. Taste. Season as needed.
* If your avocado needs ripening, pop it in a brown bag with a banana and it will be ready to use in a couple of days.
