Lemon, Ginger & Pear Zinger

A smoothie to brighten any autumn morning with the classic sweet-spicy combination of pear and ginger. We’ve added banana for creaminess, lemon to bring the zing, and nutrient-packed spinach to get you off to a running start – all whizzed together with a dash of tiger nut drink.

Ingredients you'll need
- 1 lemon
- 2 pears
- 1 banana
- A thumb of ginger
- 50g baby leaf spinach
- 330ml tiger nut drink

- A few ice cubes

Step by step this way

Slice the skin and white pith from the lemon and discard it. Roughly chop the lemon flesh, flicking out any pips. Quarter the pears and slice out the cores. Roughly chop the pears. Peel the banana and break it into chunks. Tip all three fruits into your blender.

Peel and grate in around half the ginger (or the whole thumb if you like things spicy). Tuck in the baby spinach leaves. Add a few ice cubes, pour in 330ml of the tiger nut drink and blitz for a few mins till smooth.
