Kiwi, Apple & Ginger Swirl

Juicy kiwi fruit and crisp apples get a fiery kick from fresh ginger, with earthy spinach leaves adding mineral-dense greenness and a dash of maple water swirling it all together.

Ingredients you'll need
  • 2 kiwi fruit
  • 2 apples
  • A thumb of ginger
  • 50g baby leaf spinach
  • 300ml maple water

Step by step this way

    Halve the kiwi fruit and scoop out the flesh with a teaspoon. Quarter the apples, and slice out and discard the cores and seeds. Roughly chop the apples. Add the kiwi fruit and chopped apples to your blender.

    Peel and grate in around half of the ginger (you can add more later). Tuck in the baby leaf spinach. Add a handful of ice cubes then slosh in 300ml of the maple water. Blitz for a few mins to combine, then taste and add more ginger if you think it needs it. Blitz again, then serve straight away.
